A split second that’s all it takes to change a life, to create a new dimension of character or even establish priorities. We all have those moments in which we make choices which affect our life in a significant manner.
Yesterday, after a very busy day of intense activity with business and home I finally decided I’d sit down, prop my feet up and watch a television movie. The story was about an angry young person, confused and frustrated with life yet through tears, pain and various challenges, emerged victorious and more mature from the process of it all.
After watching the film a memory of a personal moment many years ago popped up on my mind’s screen and I thought I would share it with you. It’s about a chicken and a garbage can.
I had just turned 20 years old, was a single mom and having a very rough time, especially financially. Those were the days when there wasn’t very much money to buy food. I was lucky if I had 25 cents a day to spend for a meal. Full of pride I wouldn’t let anyone know how very bad it was. However, I had two very special friends. A mother and daughter, who like guardian angels, helped me in so many ways. Emma, the mother had known extremely hard times in her life and intuitively knew just what was needed. She and her daughter Betty frequently came to visit bringing food (Emma just happened to fix too much and it wouldn’t keep), and various items for me and my baby they thought might come in handy.
This one particular day they visited Emma brought a freshly roasted chicken along with other homemade goodies and lots of other items. We had a wonderful visit, as always, and then they left for home. After they left the first place I headed for was the refrigerator to have some of that roasted chicken that Emma had brought. I was so hungry I was sure I could eat the whole bird. I open the frig no chicken! “That can’t be”, I thought, “Where did it go?” Believe me, I searched my tiny kitchen, checking everywhere. No chicken!
My stomach was growling and my taste buds hungered for that roasted bird. Then I had a thought, “The trash…it must have gone out in the paper bags by accident!” I ran down to the garage and was ready to lift the lid off of the garbage can when I stopped myself. “No! I will not dig through garbage for that chicken. I’m hungry but not that hungry.” I went back to my apartment determining that no matter how hungry I got I would never dig through garbage for food. To this day I have no idea what happened to that chicken however, the lesson learned has stayed with me all of my life.
Now, this may sound like a silly story but in a split second I set a standard for myself. I am sharing this story because each of us have moments of difficulty, frustration and confusion. Life sometimes does a tap dance on our dreams and hearts that can hurt deeply. However, it is up to us to realize whether we’re going to dig through garbage or keep the lid on and stand with clarity holding true to our higher expectations and standards.
Spring has arrived sharing her rich bounty of beauty, color, style and hope. She sends us messages each day of the abundance that life and nature have to share with each of us. Today is the day you are living. Remember, it only takes a moment to change a life; a moment of choice entirely yours to create the next step of your life. What are your choices? What will they be and how will you choose your destiny? Only you will know when that moment comes, so keep the lid on the garbage and reach only for the finest and the best.

A farmer walked into an attorney’s office wanting to file for a divorce. The attorney asked, “May I help you?” The farmer said, “Yea, I want to get one of those dayvorce’s.”
The attorney asked, “Well, do you have any grounds?” The farmer said, “Yea, I got about 140 acres.”
The attorney said, “No, you don’t understand, do you have a case?” The farmer said, “No, I don’t have a case, but I have a John Deere.”
The attorney said, No, you don’t understand, I mean do you have a grudge?” The farmer said, “Yea, I got a grudge, that’s where I park my John Deere.”
The attorney getting a little exasperated tried again. “No sir, I mean do you have a suit?” The farmer said, “Yeas sir, I got me a suit. I wear that to church on Sundays.”
Becoming a bit more stressed, the attorney asked, “Well sir, does your wife beat you up or anything?” The farmer said, “No sir, we both get up about 4:30.
Finally, the attorney couldn’t handle much more of this he asks, “Okay, let me put it this way. WHY DO YOU WANT A DIVORCE!”
The farmer sayis, “Well, I can never have a meaningful conversation with her.”

Recipe Box
Austrian Easter Braid
3/4 cup milk
1/2 cup sugar
1 tsp salt
1/2 cup butter
2 pkg quick-rise active dry yeast
3 egg yolks
1 whole egg
1Tbls grated lemon peel
4 and 3/4 cups unsifted all-purpose flour
1/2 cup raisins
1/4 cup chopped blanched almonds
1 whole egg
1 egg yolk beaten with 1 Tbls water
2 Tbls sliced blanched almonds
1) In small saucepan, heat milk just until bubbles form around edge of pan. Remove from heat; add sugar, salt and butter, stirring until butter melts. Cool to lukewarm. Springle yeast over warm water in large bowl of electric mixer; stir until dissolved. Add milk mixture.
2) Beat 3 egg yolks and 1 whole egg with fork; add to milk mixture. Add lemon peel and 2 and 1/2 cups of flour; beat with electric mixer until smooth (about 2 minutes). Gradually add 2 cups flour; mix with hands until dough is stiff enough to leave bowl; mis in remaining π cup flour if needed.
3) Turn dough out onto a lightly floured pastry cloth or board. Knead until smooth and elastic (about 10 minutes). Knead in raisins and chopped almonds. Place in a lightly greased large bowl; turn over to bring greased side up. Cover with a towel.
4) Place bowl of dough in a warm place (85F), free from drafts, and let rise for about 45 minutes or until double in bulk. Turn dough out onto a lightly floured pastry cloth or board; divide into three equal parts. Using palms of hands, roll each piece into a 24-inch-long strip.
5) Braid dough strips; press ends together to seal. Place braid on large, greased cookie sheet. Put whole egg (still in shell) in center of the middle strip. Cover with a towel and let rise about 25-30 minutes or until double in bulk. Preheat oven to 375F.
6) Brush dough with egg yolk-water mixture; sprinkle with sliced almonds. Bake 35 to 40 minutes or until a rich golden brown. (If crust seems too brown after 25 minutes of baking, cover with aluminum foil.) Let cool on wire rack; serve warm. Makes one loaf.

True Stories About Real People
Hurricane Katrina affected the lives of millions of people. Dr. Bill Cassidy, of Baton Rouge was interviewed recently by Ellen McGirt. His story and that of volunteers is an example of what happens when brains, determination and hard work come together.
“We had no way to predict what people coming out of New Orleans were going to need. My physician group didn’t have emergency preparedness responsibilities, so we made a lot of this stuff up as we went along.”
What Dr. Cassidy, the volunteer staff of nurses and other doctors, along with over 150 other people accomplished is truly an inspiring story. They found an old K Mart that had been abandoned for a number of years. They needed to have this building up and ready in two days. The medical staff designed the layout for the windowless, filthy facility. A friend of Dr. Cassidy was an insurance agent and he volunteered to get volunteers. Within a short period of time about 150 people from the area showed up with cleaning materials and they started cleaning out the old building. An electrician found out they needed power and he managed to get it into the building with 24 hours. With lots of elbow grease and good planning they had four to five wards with 30 cots set up and ready to go.
Trucks started coming in and $5 million worth of medical supplies was delivered, however, there were no packing lists with them. There were I.V bags but no poles. They had cots but no crash carts. EKG machines, printers, even a new Honda was brought in. Additional medical personnel started arriving from as far away as Iowa. When patients started coming into the old K Mart building, beds were set up, lights, generators, computers were all operational and ready to be put to work. There were volunteers to help with children, provide transportation and reconnect families.
Dr. Cassidy said, “We saw fatigue, dehydration, emotional trauma and illnesses like diabetes and asthma made worse by the patients’ experience. The shelters wouldn’t take newborns, so we took mamas and their babies. It was the most amazing thing. We never got the volume we braced for, but we were ready in 26 hours.”
