Well, it has arrived – fall that is.  Just a couple of days ago when it was warm and sunny I decided to pack up the outdoor patio cushions and put them away.  There was that ‘feel’ in the air that a storm would be coming in soon and it was time to prepare for the seasonal shift.  Sure enough storm fronts started to fill our blue skies of the Pacific Northwest, winds started to blow and temperatures started dropping.

 Today I was pulling out of winter storage sweaters, warm woolen coats, gloves and umbrellas.  Rains have pounded all through the night and everything is thoroughly soaked with those life-giving waters.  Our Scottish Terriers,  Kinzie and Victor, don’t care what the weather is.  Waiting patiently at the front door they watch me as I put on my hiking boots, winter vest and gloves.  As always they are eager to leave and a little frustrated that it is taking me so long to get ready. Once I am all suited up for the outside weather, the dogs are hooked up to their leads and I have my keys in hand as we step outside into the brisk environment of the outdoors and we are off for our daily trek.

Animals are such wonderful teachers. Every day Kinzie, our 8 year old female, is so enthusiastic about the daily walking experience that she bounces with joy. My husband jokingly says she came equipped with a built in turbo charger as her walking style always starts out super fast.  Regardless of the weather she can hardly wait to step into the opportunity of experiencing something new. How many of us when the mornings get darker drag ourselves out of bed grumbling about having to get up?  How many times do we see ourselves stifled instead of appreciating the uniqueness of each day and counting our blessings of the now?

Victor, our male, who just turned 2 years old, starts out slower than Kinzie, however, he is an investigative explorer.  He wants to know what is going on, who has left the latest pee-mail and is there anything new evolving.  He wants to stop at just about every other tree to be sure he hasn’t missed anything.  As I walk fast this can sometimes become very frustrating to find myself moving along at a good pace and suddenly forced to a halt by a 20 pound Scottie who has some investigating to do. However, Victor has taught me that slowing down has its advantages.  You can enjoy, observe and appreciate what is going on around you.  You have time to think, evaluate and plan.  How often are we so busy that we feel like we can hardly take a breath to catch up with ourselves?  When was the last time you went out for a walk, watched the colors in the sky change or clouds move and the wind talking to the trees?

This is a wonderful time of the year to take time from the hustle and bustle of life to savor a hot cup of tea or cocoa, curl up in your favorite space and read a book, talk with a friend or journal about your goals, dreams and desires.

As the daylight hours become shorter savor your opportunities to have quiet moments and guard them so they don’t escape from you.  Your future is created by how you live in the now.  My Scotties have taught me and continue to remind me to live in the moment and I invite you to do the same.

Halloween Games

I was doing some research on the web about Halloween and thought you would enjoy knowing about some of these traditions.  Personally I would bypass the slugs but to each their own.

Some games traditionally played at Halloween are forms of divination. In Puicíní (pronounced "poocheeny"), a game played in Ireland, a blindfolded person is seated in front of a table on which several saucers are placed. The saucers are shuffled and the seated person then chooses one by touch. The contents of the saucer determine the person's life during the following year. A saucer containing earth means someone known to the player will die during the next year, a saucer containing water foretells emigration, a ring foretells marriage, a set of Rosary beads indicates that the person will take Holy Orders (becoming a nun or a priest). A coin means new wealth, a bean means poverty, and so on.

 In 19th-century Ireland, young women placed slugs in saucers sprinkled with flour. The wriggling of the slugs and the patterns subsequently left behind on the saucers were believed to portray the faces of the women's future spouses.

 A traditional Irish and Scottish form of divining one's future spouse is to carve an apple in one long strip, then toss the peel over one's shoulder. The peel is believed to land in the shape of the first letter of the future spouse's name. This custom has survived among Irish and Scottish immigrants in the rural United States.

Recipe Box

…………..”Cream Cheese-Frosted Pumpkin Cake

This has been a favorite recipe of mine for years.  Every time I serve it I receive awesome compliments and so will you.  This can be prepared in advance and kept in the refrigerator.  The flavors just get better and better.  Enjoy!

Ingredients: Cake – 4 large eggs, 2 cups all-purpose flour, sifted before measuring, 2 tsp. baking soda, ½ tsp. salt, 1 tsp. ground cloves, 2 tsp. ground cinnamon, ½ tsp. ground ginger, ¼ tsp. ground nutmeg, 2 cups sugar, 1 cup oil, 1 can (1lb) pumpkin.

                      Frosting – 2 pkg (3 oz-size) cream cheese, softened, 1 Tbls. rum or 1 teaspoon vanilla extract, 3 cups confectioners’ sugar, and pecan or walnut halves for garnish.

Directions: 1) Crack eggs into large bowl of electric mixer; cover and let stand 30 minutes until room temperature.  Preheat oven to 350 degrees.  Meanwhile, sift flour with baking soda, salt, cloves, cinnamon, ginger and nutmeg.

                     2) With electric mixer at high speed, beat eggs thoroughly.  Add sugar and continue to beat until eggs are lemony in color and the mixture is light and fluffy.  Gradually add oil and pumpkin, beating well after each addition to blend thoroughly.

                     3) With electric mixer at low speed, beat in flour mixture, several spoonfuls at a time, beating only until flour is moistened.  Pour into ungreased 10-inch tube pan without removable bottom.  Bake about 1 hour, or until surface springs back when gently pressed with fingertips.

                     4) Remove cake from oven and cool completely in pan on wire rack.  Meanwhile, prepare Cream-Cheese Frosting: In a small bowl, with electric mixer at medium speed, beat cream cheese with rum until smooth and soft.  Gradually add confectioners’ sugar, beating until light and fluffy.

                     5) Using a long, narrow metal spatula, carefully loosen cake from pan; remove.  Place on cake plate and frost top and sides with cream-cheese frosting.  Use the tip of the spatula to swirl the frosting in a spoke-like fashion in toward the center of the cake.

                     6) Arrange pecan or walnut halves decoratively around top edge of cake.  Serve cake immediately or store, tightly covered, in refrigerator.  Remove about 30 minutes before serving.  Makes 12 servings.

 


GOLDEN NUGGETS

Life has a way of bringing good things to us when we least expect them.  This story is an example of how principle, integrity, goodwill and dedication can come full circle in life with handsome gifts.

                  Daniel Webster was a young lawyer who was eagerly looking for his first client.  When you start out in a career it is never an easy journey.  Often you comprise on fees just to get some business.  Such was the situation for Daniel.  He took a particular case for the very small fee of $20.00.  This was to be a very difficult case incurring travel costs to Boston that he hadn’t planned on.  That cost was going to cost him more than his fee.  In his mind that wasn’t the issue.  He was determined that he would give his very best effort on all levels and win the case.  He won the case.  Though it was a small case, upon viewing it in later years, it was a great victory for him.

                  Many years later, a large company approached the successful attorney Webster on short notice.  They wanted him to take their case and they were more than happy to pay a very handsome fee, which at the time was quite substantial. When Webster reviewed the case he found that it was almost exactly the same as the case he had handled as a young attorney many years before for only $20.00.  He took the case and with the same conscientious attention won the case.
