You never know what you’re going to discover when you are channel surfing. If you are like me during the summer months you are constantly scanning channels to find programming you haven’t seen before. That is what I was doing one afternoon when I happened to discover a special live broadcast on C-Span of the ‘NOW’, National Organization of Women’s Conference. A guest speaker, Barbara Hillary, was being honored with the ‘Women of Courage’ award.
Barbara is the first African American woman to reach the North Pole. This woman had not only raised the funds to finance the expedition but at the youthful age of 75 took skiing lessons so she would be fit for her expedition.That’s right; you read correctly, she was 75 when she traveled to an area in the world where the average temperature is -78 degrees. This is a woman who had this dream for much of her life was determined she was going to do it regardless of what people thought.
She had some excellent comments during her speech that I thought worthy of sharing.
1) Each of us has an ‘Inside Giant’. It is that part of us that is durable, versatile, energetic and brave. We have to give that ‘Giant’ breath or suppress it.
2) We often stand in our own way by finding excuses, blaming something or someone, becoming rooted in the woulda’s, shoulda’s or coulda’s and they all equal a big zero.
3) Flexibility and perseverance are tools that come in handy as adjustments often have to be made. With Barbara at the North Pole it was always the weather she had to adjust for.
4) Avoid negative people and don’t wait for anyone. She is a lung cancer survivor, 75 years old, didn’t know how to ski and knew absolutely nothing about polar bears. When someone said she could be attacked and eaten by one her response was, “That’s ok, that bear will be getting good soul food!”
5) Recipe for success…If you are tired, flexibility, perseverance, a pinch of heart and a good sense of humor will get you through.
Today this vivacious woman of 76 is working towards her next trip which will be to the South Pole. What a wonderful example of determination and enthusiasm for life she gives! I know that she inspired my day and reminded me that each of us should reach for what others may deem impossible no matter what it may be.
It is so easy to get discouraged with the challenges that life dishes out. Many times we’ll get frustrated thinking our desires, dreams aren’t worthy of any more effort. Barbara is a good example of why that doesn’t have to be the case. Don’t give up on yourself, drop your hopes or bury your dreams.

Chocolate Chip Ice Cream Sandwiches
Ice Cream…one of the most popular foods on the planet combined with a most popular cookie makes for an absolutely wonderful dessert and perfect for those hot summer days. This is a recipe for what could be a 431 calorie snack that becomes only 181 when you use ingredients that taste good but are low in calories. You have the taste but don’t gain the wider waist, not a bad recipe to know about if you are watching your summer figure.
Ingredients: 2 cups all-purpose flour, 1/4 tsp. baking soda, 1/8 tsp. salt, 3/4 cup sugar, 1 egg white, 1/4 tsp. vanilla extract, 2 Tbs. butter, melted and cooled, 1/3 cup (1%) low-fat milk, 1/2 oz. semisweet chocolate (use 4-oz bar finely chopped), 1 and 1/2 cups low-fat ice cream or frozen yogurt, softened.
Directions: Preheat oven to 350 degrees. Lightly coat 2 baking sheets with cooking spray. In small bowl, mix flour, baking soda and salt; reserve. In large bowl, whisk sugar, egg white and vanilla until smooth and pale. Whisk in butter, then milk. Stir in flour mixture until just combined; mix in chocolate. Drop 24 Tbs. onto baking sheets, spacing 2” apart. Flatten each with bottom of a glass until about 1/8” thick. Bake 10 minutes or until firm and edges are golden. Cool completely on rack. Place about 2 Tbs. ice cream on bottom of each of 12 cookies. Top with remaining cookies. Wrap and freeze until firm, at least 2 hours.

How many of us would risk our lives even once, much less day after day? And yet, she smiles
Irena Sendler
A gentle unknown heroine who deserves to be remembered and honored.
There recently was a death of a 98 year-old lady named Irena. During WWII, Irena got permission to work in the Warsaw Ghetto, as a Plumbing/Sewer specialist. She had an 'ulterior motive' ... She KNEW what the Nazi's plans were for the Jews, (being German.) Irena smuggled infants out in the bottom of the tool box she carried and she carried in the back of her truck a burlap sack, (for larger kids.) She also had a dog in the back that she trained to bark when the Nazi soldiers let her in and out of the ghetto. The soldiers of course wanted nothing to do with the dog and the barking covered the kids/infants noises.
During her time of doing this, she managed to smuggle out and save 2500 kids/infants. She was caught, and the Nazi's broke both her legs, arms and beat her severely. Irena kept a record of the names of all the kids she smuggled out and kept them in a glass jar, buried under a tree in her back yard. After the war, she tried to locate any parents that may have survived it and reunited the family. Most of course had been gassed. Those kids she helped got placed into foster family homes or adopted.
Last year Irena was up for the Nobel Peace Prize ... She was not selected. Submitted by Debbie Z., Washington
