A Moment with Donna © " Questions "

Once there was a little girl who was watching her mother prepare a pot roast and she became curious about what she saw her mother doing.  “Mommy, why do you cut off the ends of the meat before you put it in the pan?”

                The girl’s mother smiles at her and says, “Sweetheart, that’s what my mother taught me to do many years ago.  The roast always turns out perfectly each time. That’s why I do it.”

                The next time the little girl was at her grandmothers’ house she asked, “Grandma, why do you cut the ends of the roast off before you cook it?”

                As grandmother was cooking chicken she was a bit perplexed by the child’s question. “Why do you ask dear?”

                “Well, Mommy always cuts off the end of the roast before she puts it in the pan.  She says that’s what you always did but I still don’t understand why?”

                Her grandmother laughs while wiping her hands on her apron. “Child, the reason I used to do that is because my cooking pan was too small. I had to trim the ends of the roast so it would fit inside.”

                How often do we have questions we fear to ask?  How often do we do things mindlessly because ‘that’s the way it’s always been done?  How often have we been told ‘if it ain’t broke don’t mess with it!’?

                One of the great things about children is their inquisitiveness.  It can drive adults a bit nuts when they continuously ask “Why?  How come? And, why not?” However, I think that as adults we need to dip into that area of thinking so we can continue to grow and develop as individuals.

                Too often I hear people say how the ‘good old days’ were so much better than today.  Frequently they are quick to criticize, offering lots of words but no real solutions for current problems.  Locking themselves into monotonous routines of thinking and processing, they aren’t willing to stick their necks out to explore choices, new opportunities or contemplate change.  Mediocrity becomes their standard of expression.

                Life is a challenge at best.  Every moment can hold promise or tragedy.  Nothing flows in a straight line and every curve of change we encounter offers options.  I feel fortunate as an individual to be able to review materials just about every day that tells of people dealing with challenges, some of them terrifying, and how they work through them with courage, insight and faith.  Most of the time challenges happen without consent.  By that I mean we’ve not stood out on a street corner saying, “Ok Universe, sock it to ME!” No, life is just life.

                What I find consistently is that a patterning of questioning should be considered when we are in a state of confusion like: How can I improve this?  Is there a root cause?  Who can I talk to get help?  There has to be an answer, what can I do to find it?

                It is only through the challenging of our beliefs, habits and processes for action that results can evolve.  The capacity to stretch ourselves into new levels of self-development should be exciting and something to explore with enthusiasm not fear.  When you think about it, advancement has evolved because of necessity. During a particular moment of inspiration someone thought, “Enough of this crap, there has to be another, a better way.”

                Spring is a glorious time of the year to spend some time to wake up that sleepy side of yourself you’ve been meaning to energize.  This is the time to break routine, do something different like visiting a place you’ve never been to; join a community group that you have an interest in; take a class or read a book about a subject totally unknown to you.  Take a good look at Mother Nature she is always reinventing herself.

                Purpose, passion and demonstration are the ongoing processes for human experience.  Whenever we question we grow.  When we grow our world expands and as it expands it brings us into new experiences showing us that we don’t have an expiration date on learning and living.  Life is an adventure that should be lived with mindful presence and no one can do it for you but you.

Recipe Box

Real Mexican Enchiladas

          This is a favorite recipe of mine and it has been enjoyed by many guests in my home.  It can be prepared ahead and refrigerated.  Prior to cooking the dish in the 350 degree oven let it come to room temperature.  This is a great recipe for Cinco `de Mayo or anytime you want a flavorful Mexican dish.

 

                Ingredients: 12 – 6” flour tortillas.  Meat Filling: 1 lb ground chuck, 1 clove garlic-finely chopped, 2 tsp salt, 1Tbls tequila, cognac or water, 1 Tbls chili powder, 1 can (1lb) kidney beans-undrained.  Tomato Sauce: 3 Tbls Olive Oil, 1 clove garlic-minced, 1/2 chopped onion, 1/4 chopped green pepper, 1 can (2lb 3oz) Italian tomatoes-undrained, 1 can (6oz) tomato paste, 1 beef-bouillon cube, 3/4 cup boiling water, 2 to 3 Tbls finely chopped canned green chilies, dash ground cumin, ∏ tsp salt, 1/8 tsp pepper.  Topping: 1 cup grated sharp cheddar cheese.

 

                Directions: Slowly heat a heavy skillet.  This will be used to bake tortillas.

Prepare meat filling: In a medium skillet, over low heat, sauté chuck, stirring, with 1 clove garlic, 2 tsp salt, tequila and chili powder.  Cook until chuck is browned. Stir in kidney beans.  Remove from heat.

  Make tomato sauce: In hot oil in skillet, sauté garlic, onion and green pepper until tender-about 5 minutes. Remove from heat. Stir in undrained tomatoes and tomato paste and mix well. Bring to boiling point, stirring, over medium heat. Dissolve 1 beef bouillon cube in 3/4 cup boiling water. Add beef bouillon, the chilies, cumin, salt and pepper to the tomato mixture; simmer, uncovered and stirring occasionally, 5 minutes, to thicken slightly.

While sauce is cooking bake tortillas until lightly browned in heated skillet.  Once sauce is ready then assemble: Oven is preheated to 350 degrees.  Place 1/3 cup filling in center of each tortilla; roll up.  Arrange, seam side down, in a 13-by-9-by-2-inch baking dish.  Pour the tomato sauce over all; sprinkle top with grated cheese.  Bake for 25 minutes.  Makes 12 enchiladas.

True Stories about Real People

           I truly believe in the ‘power of one’.  There are so many individuals that make a difference that it is sometimes difficult to choose one in particular but this month I chose to focus on a woman who has helped 1,000 foster children find homes.  Her name is Diane Granito and this is her story.

                Diane is located in Santa Fe, New Mexico.  She interviewed for and was hired to be an adoptive family recruiter.  She had a special feel for this position as her father had been left on someone’s doorstep and was adopted by a woman in the local community.  Her dad had been loved by his adopted family. Without them he could have gone into an orphanage perhaps never being adopted by anyone.

                She started observing the pictures of children that were being posted and decided that something needed to change as they were awful in general.  There was no budget for doing this but that didn’t stop Diane.  She had an idea and went to work on it.  She called 50 local photographers and asked if they would donate their services to help children find parents.  Every one of them responded with a resounding “Yes.”

                The result was fabulous.  The photos of the children showed them smiling, laughing and just being themselves.  The next step was finding a gallery that would display these beautiful photos.  The exhibit was called “The Heart Gallery”.

 The very next day after the first exhibit Diane received 600 messages from people who wanted to help her cause and also adopt one of the children. Within a very short time people began contacting her from Arizona and California, they wanted to help too.  “The Heart Gallery” has now expanded to 40 states that with Diane’s help created their own exhibits.
