The Old Dog"

An old dog is half asleep on the porch of the general store, moaning and groaning in the sun.  “Why is your dog acting that way? A customer asks the store owner.
                “Oh,” answered the man, “he’s lying on a nail.”
                “Well, why doesn’t he move?
                “Because it’s not hurting him bad enough.”
               

When I read this story it prompted a lot of thoughts.  How many of us, at one time or another, been like that old dog and resistant to change even though we were miserable?

 The word ‘paradigm’ popped into my mind.  What does ‘paradigm’ mean? It is an example serving as a model or pattern; mold, standard or ideal. We all have them – paradigms – and we develop them from the time we are born. Anything and everything we experience, the training we receive as we are growing up from parents, teachers and everyone else we come into contact with; all of this and more creates these patterns within us.  As we mature we may question, challenge these standards to find out what works for us.  It is just the natural process of life.

However, there are moments when we get stuck….frustrated….irritated with ourselves and wonder how we arrived at a particular impasse.  I can’t speak for anyone else but it has been my observation that the mind has filters that enable us to become attached to beliefs. We adopt these beliefs as our own and may find we have outgrown them. However, these beliefs coupled with imagination, the living glue that creates attachments to the paradigms we fervently hold dear, won’t be released easily.  We don’t think we can change them, at least not if we think like the old dog.  We have to reach a point where we recognize that they aren’t needed anymore and let them go.

It seems to be a lot easier to change clothing styles than thinking styles.  Why?  Because they are too comfortable like a pair of old slippers, even though they may make the feet hurt if they are walked in for too long, you just won’t give them up. Changing paradigms about money, relationships, living style, patterns for good health or anything else for that matter takes conscious attention to what you want – not what you don’t want.

November is a month of change both for leaving behind daylight savings time and warm temperatures.  The leaves are rapidly dropping from the trees and Old Man Winter will be paying us a visit soon. With shorter days, now is the time for simmering soups on the stove, fragrant bread baking in the oven to fill our spirits and bodies with nutritional warmth. Also it is time to cozy up with ourselves to think about what we need to move forward and what needs to be left behind.

Just as Mother Nature is in constant movement so we must recognize that our lives are not meant to be stagnant, without purpose or meaning.  As we move towards the holiday season take time for yourself and ask what is the biggest picture you can possible imagine for your life.  Then think about how you can start the first step forward towards your objectives and keep on moving.  Fear has no place in this journey. Adventure and the unknown await you.  Shine in the experience and bask in the freedom of the greater you that is within.

Poached Chicken with Sweet & Savory Sauce

For the holidays if you are looking for something different to serve this dish will ‘wow’ your guests.

There seems to be lots of ingredients but if you assemble them ahead of time your cooking process will be smooth and easy.  Enjoy!

Ingredients: 4-lb ready-to-cook roasting chicken, salt, 1/2 tsp. ground cinnamon, 1/2 tsp. turmeric, 1/8 tsp. ground cloves, dash pepper, 1 Tbls.water, 2 Tbls. oil, 2 cloves crushed garlic, 1/2 cup orange juice, 1/2 cup water, 2 Tbls. seedless raisins, 2 Tbls. whole unblanched almonds, 2 tsp. capers, 2 Tbls. cornstarch, 2 Tbls. orange peel (julienned), 2 Tbls. orange marmalade, 1 cup coarsely chopped romaine lettuce (optional for garnish), 3 slices navel orange (optional for garnish).

Directions: 1. Remove and discard neck and giblets from chicken. Rinse chicken under cold running water; drain well and pat dry. Sprinkle inside of chicken cavity with 1 teaspoon salt. Tuck wings under body; tie legs together at ends with kitchen twine. 2. In a small bowl, combine 1/4 teaspoon salt, cinnamon, turmeric, cloves, pepper and 1 Tbls. water.  Stir well until thoroughly blended. Using a pastry brush, brush the spice mixture evenly over the entire surface of the chicken. Set aside. 3. Put vegetable oil in a 6-quart Dutch oven. Heat over moderately high heat until oil is very hot.  Add garlic and onion. Sauté, stirring constantly with a wooden spoon, until lightly browned. Stir in orange juice, 1/4 cup of the water, the raisins, almonds and capers. 4. Place chicken in Dutch oven, breast side up. Cover; bring to a boil over moderately high heat. Reduce heat and simmer for 1 hour and 15 minutes or until the chicken is very tender. Baste chicken occasionally during the cooking time. 5. Using two large forks, remove chicken from Dutch oven and place on warm serving platter. Remove twine from legs; cover chicken and keep warm. Skim off and discard fat from broth in Dutch oven. Stir cornstarch into remaining water; stir into broth, adding orange peel and marmalade. 6. Cook broth over moderately high heat, stirring constantly with a wooden spoon until mixture turns clear and is thickened.  Spoon some sauce over chicken and garnish the platter with romaine and twisted orange slices.  Pass remaining sauce.  Makes 8 servings.
