….Be The Change

During a lesson a driving instructor commented to his student he was seeing spots before his eyes.

                  The concerned student responded, “That could be serious. My father complained of seeing spots before being diagnosed with a detached retina. You really should see a doctor immediately!”

                  “Or,” said the instructor ‘you could just turn the windshield wipers on.”       ~~Martin Rose

                  This cute story is a great illustration of how the human mind works. Not everyone sees the same things or when something is stated do we think the same as the person who may be expressing their observation. Communication is a two way street but usually we are mentally driving on only one side of the road.  It takes discipline and practice to develop multiple observation talents and even then our personal filters may block out what we perceive depending on what we are focusing on.

                  Hardly a day goes by without someone complaining about what is wrong with the world; how the kids are worse than any generation previous; how …putting it bluntly…the world is going to hell in a hand basket.  Well, if that is the case then I pose a challenge.  How can you be the change that you want demonstrated in the world?

                  Clarity is needed if we are to see options that we can work with, and then it takes trust in ourselves and others so we can stretch and expand our self imposed boundaries into new expression.  How does one do that?

·       Be willing to explore new possibilities.

·       Open your mouth and ask questions, inquire from others who might have experience you don’t have.

·       Be open to new learning opportunities and challenge old habits and beliefs.

·       Be willing to take responsibility to put aside ‘blame game’ realizing life never promised to be fair and get back into the game of living life with gusto.

·       Thrive on exploring different venues.

These past few days have presented some realities that caused some delay in my getting this newsletter out to you. A close friend passed away; a dear family member died yesterday and another friend notified me that they were dealing with serious financial challenges that were forcing them into foreclosure on a home they have lived in for over 30 years.  A giant tsunami of human and natural environmental challenges brought gifts of thoughtfulness in unexpected ways.

Focus, clarity and the 2 P’s – patience and persistence during times of difficulty can be endearing friends to know. Focus on what needs to be done, have a clear picture of your desired objective and be patient with yourself, your circumstances and what you can deal with.  Persevere knowing this too shall pass.

There is no free lunch, the Universe has no favorites and life is just what it is supposed to be an ongoing living experiment and experience.  So fill up your champagne glass with sparkling cider or the real bubbly and toast yourself and everything you have. Express gratitude for your blessings-savoring the fact you are alive, ready, willing and able to live your life to its max.

Keep your mental windshield clean and enjoy this living adventure called ‘Life’. Be the change.

The Recipe Box –

Apple Spice Custard Cake

Tenderloin, Cranberry & Pear Salad

with Honey Mustard Dressing

                  The temperatures are getting warmer and lighter fare is the choice for many.  This is a recipe that is perfect for a light dinner that can serve four quite nicely accompanied with hot sourdough bread and a good glass of wine.  This comes from the ‘Healthy Beef Cookbook’ and is delicious. Enjoy

Ingredients: 4 beef tenderloin steaks, cut 3/4 inch thick (4oz each), 1/2 tsp coarse grind black pepper, 1 package (5oz) mixed baby salad greens, 1 medium red or green pear, cored, cut into 16 wedges, 1/4 cup dried cranberries, salt, cup coarsely chopped pecans-toasted, 1/4 cup crumbled goat cheese (optional)

Honey Mustard Dressing: 1/2 cup prepared honey mustard, 2-3 Tbls water, 1 and 1/2 tsp olive oil, 1 tsp white wine vinegar, 1/4 tsp coarse grind black pepper, 1/8 tsp salt

Directions: 1) Season beef steaks with pepper. Heat large nonstick skillet over medium heat until hot. Place steaks in skillet; cook 7-9 minutes for medium rare to medium doneness, turning occasionally. 2) Meanwhile whisk Honey Mustard Dressing ingredients in small bowl until well blended. Set aside. Divide greens evenly among 4 plates. Top evenly with pear wedges and dried cranberries. 3) Carve steaks into thin slices; season with salt as desired. Divide steak slices evenly over salads. Top each salad evenly with dressing, pecans and goat cheese, if desired.

It was a long and winding drive through the Italian Alps.  A two-year-old girl named Alexandra was sleeping soundly safely secured in her car seat in the back seat of her parents car.  She awakened and begged her parents to let her come into the front seat so she could be with them. Her mom said no and ignored the complaining of the frustrated child. It was only moments later that their car skidded on the wet road. Spinning out of control the vehicle crossed the other traffic lanes fortunately bypassing a deep gorge and finally stopped at a stone wall.  Alexandra’s parents were quite bruised and shaken by the experience. Alexandra was unhurt, safe and secure in her car seat.  The mother, Tanya, shuddered when she thought about what might have happened to her child if she had been holding her in her lap.

The family returned to California after their trip. Tanya began a one-woman campaign to get legislation that would require automobile safety seats for children under four years old or weighing less than 40 pounds.  Without any political savvy or financial backing she spent the next four years talking to everyone who would listen.  In 1983, the Child Restraint Law went into effect in California and by the end of the year there was a decline of injuries to children in auto accidents – more than 400 fewer incidents than usually reported.
