…………Appreciation

 

November is a month when Mother Nature is busily whipping the landscape into shape with her brisk winds and on again, off again storms bringing the rains that keep our Northwest green.  Wind is her vacuum cleaner sucking leaves, pine cones and needles off of their branches and anything else that needs prepping prior to ‘Old Man Winter’ coming to visit.  I have to say that her housekeeping process leaves a lot to be desired as she leaves an untidy mess behind, however, that’s what rakes, brooms and blowers are for.

                  As I am writing this commentary a lot of activity is happening outside my office window. The boughs of trees are swaying to winds that are beginning to stir, squirrels are busily running about gathering seeds to take to their nest, Pigmy Nuthatches are fluttering from branch to branch pecking away at moss on tree branches snacking on whatever catches their fancy and robins are in abundance performing aerial acrobatics as they check out our yard for tempting morsels to eat.  These creatures are actively living in the moment. Every vigilant for possible dangers they nonetheless take advantage of playing while taking care of the business of the day.

                  A wise teacher once told me that if you desire to develop a true awareness of life pay attention to Mother Nature.  She has a lot to offer if you’ll take the time to be quiet enough to be patient, observe and listen.  I have found this wisdom well worth listening to.

                  I chose appreciation as my theme this month because it means gratitude and thankful recognition. When life slams us with stormy, painful challenges throwing us up and out of our securities (whatever they may be) we feel terribly vulnerable, scared and uncertain.  Will we or can we survive them? Yes, we can.

                  How?  By recognizing that life isn’t a straight line and will always have its seasons of change just like Nature.  It takes quiet time to think through strategies, determine the action to be taken and then following through and doing what needs to be done.

                  There is another ingredient for success.  Appreciation-being grateful for the blessings you have. Not long ago I read this quote, “You should always give thanks.  Just do something to turn your heart towards the Creator.” You can express gratitude for just about anything by just giving a moment to recognize the blessings that are all around you not focusing on what you don’t have and saying quietly within yourself ‘Thank You’.

                  Thanksgiving isn’t just a once a year celebration it is a representation of how we should live our daily lives in celebration.  Developing a daily ritual of appreciation with some quiet time can rejuvenate you in unexpected ways.  Let gratefulness wrap you within its warm blanket of harmony, clarity and peace.  Accept that blessings will fill your day, your life, without limitation in wonderful ways.

The Recipe Box Talking Turkey

It is that time of year when we start making plans for a big holiday feast with all of the trimmings. This is the month that kicks off the holiday season big time and if you are like me you are always interested in some tasty variations to the favorite holiday meat – turkey.   This recipe is fabulous and my friend, Leo Pearlstein, author of Mrs. Cubbison’s Best Stuffing Cookbook, along with Lisa Messenger gave it to me.

 

Blackened Turkey Breast with Jambalaya Stuffing

Ingredients:2-pound boneless turkey breast half, skin removed, 2Tbls melted butter, 3 Tbls Cajun spice blend.  Stuffing: 4 oz. Andouille or Polish sausage, sliced, 2 Tbls butter, 1 medium onion-chopped, 1 small green bell pepper, chopped, 2 green onions-thinly sliced, 1 clove garlic, 2 Tbls chopped fresh parsley, 3 cups cornbread stuffing mix, ½ tsp chili powder, ¼ tsp black pepper, ½ tsp dried thyme, 1/8 tsp ground cloves, 1 cup chicken broth.

Directions: 1) Preheat the oven to 350 degrees.  Lightly grease a 2-quart casserole dish and set aside. 2) Rinse and dry the turkey breast. Brush with just enough melted butter to cover, and sprinkle with the Cajun spice blend. 3) Preheat a large skillet over high heat. Add the turkey breast and cook for 5 minutes or until the first side is browned but not black. Turn the breast over and cook for an additional 5 minutes or until browned. 4) Transfer the turkey to a roasting pan, and place in the preheated oven for about 1 hour or until a thermometer inserted in the breast reads 170 degrees. 5) When the turkey is beginning to roast in the oven, preheat a large skillet over medium heat. Add the sausage and cook, stirring occasionally, for 3 to 5 minutes or until lightly browned.  Remove the sausage from the skillet and set aside. 6) Place the butter in the skillet and melt over low-medium heat. Add the onion, bell pepper, green onions, garlic, and parsley, and sauté for 2-3 minutes or until the vegetables are tender. 7) Add the stuffing mix, chili powder, pepper, thyme, cloves, and reserved sausage to the skillet, and stir to combine. Stir in enough chicken broth to moisten. 8) Transfer the stuffing to the prepared dish, cover, and bake alongside the turkey during the last 40 minutes of roasting. Cook covered for the first 30 minutes. Then remove the cover and bake for 10 additional minutes or until the top is crisp. 9) Place the turkey on a carving board, and allow to rest for 10 minutes. Then slice as desired. 10) To serve, arrange the stuffing on a platter, and arrange the turkey slices over the stuffing.

The presence of turkeys in politics apparently started in 1848 during the presidential election of that year.  By the 1860’s a custom had been established for people to send nice plump turkeys to the president for the Thanksgiving and Christmas holidays.  Abraham Lincoln had received a beautiful turkey in 1963 from a Mr. Henry Vose of Westerly, Rhode Island but what evolved after the gift was received created a story that was repeated many times.

                  President Lincoln’s ten-year-old son Tad decided that the turkey was his friend and promptly called him ‘Jack’.  When the time arrived to prepare and have ‘Jack’ for dinner at Christmas, Tad burst into one of  his father’s cabinet meetings requesting that ‘Jack’ be saved from the ax.  This Lincoln did. 

On election day in 1864, President Lincoln saw the turkey at the polling place at the White House and ask Tad, “What business has the turkey stalking about the polls in that way? Does he vote” “No,” Tad replied, “he’s not of age.”

President Lincoln loved Tad’s quick response and took pride in re-telling the story again and again.
