It’s Memorial Day Weekend and barbeque is not fitting into Mother Nature’s weather calendar. Nope – the rain gods have declared their dominant position here in the Pacific Northwest and though many of us have sent appeals to the sun gods to take primary status – our appeals have been ignored.

So, what is a person to do with soft rains watering our gardens and grey skies wrapping us with cool temps? Well, bake of course! Out come the recipe books, measuring cups and spoons, various ingredients; ovens are turned on and mixers put into position, ready for action. I decide on two very different recipes (new ones) and before long magnificent smells fill the kitchen making one forget the dull grey skies outside. The doldrums are tranquilized by the miracle fragrances of orange zest, vanilla, cinnamon and more.

Baking for me has always been exercise for balance.  It requires focus, attention to details, following directions (not always perfect on this step) and patience to allow the baking process itself do the work without interruption, paying attention to the proper timing-sometimes less, sometimes more-whatever is needed.  The processes for successful baking and achieving success in life have similar parallels. As an individual we choose our ‘recipe’ or course we desire. It then takes acquiring the tools and ingredients needed – like schooling, job experience, mentoring – then you have to weigh, measure and apply the proper balance of it all so it can blend properly. Once that is done you then have to put it into a form so it can take shape and most importantly you have to let the unseen magic of chemistry – interaction with people, circumstances and timing - do its work. Something I’ve always enjoyed with baking is if I don’t like the way the recipe turns out I adjust or adapt some of the ingredients or just throw out the whole recipe and choose a different one.  It is my choice and very liberating.

Success means many different things to different people. Each of us have the opportunity to choose our ‘recipes’ and I use the plural for a reason. Life isn’t stagnant it is constantly changing and because of that we may find ourselves disposing of, refining or redesigning our direction at any time.  Certain ‘ingredients’ we thought mandatory become obsolete and we replace them. This is freedom – your right of choice. What matters most is that you empower yourself by being attentive to what is right for you.  So don’t be afraid to ask yourself what success really means to you. Think about your priorities and what you may need to enhance your choices, what thoughtful actions you may need to take. Do what needs to be done mindfully, then, let actions take their course.

There is no time like the present to invest in yourself, your dreams and what it will take to achieve them; whether it is health, education, financial freedom… whatever. You are the ‘chef’ who chooses and directs your choices.  Have faith in yourself for one day someone just might ask you for your ‘recipe for success’ and wow, you’ll be so special.

The Recipe Box – A Gift of Salts

Recently I was given a gift of some flavored salts.  They were absolutely wonderful and when I came across some simple recipes I felt I should share them with you as they make wonderful, inexpensive gourmet gifts for those you know who love to cook. Here are 5 varieties to enjoy. Try them…I think you’ll like them and it costs just pennies to make.

1.      Citrus Salt: Mix 1 tsp. grated lemon zest, 1 tsp. grated lime zest and 1/2 tsp. grated orange zest; let dry completely on paper towel. Stir into 1/2 cup kosher salt. Use on chicken, fish or vegetables.

2.      Italian Salt: Combine 1 Tbs. finely chopped sun-dried tomato (not in oil), 1 tsp onion powder and 1 tsp. garlic powder with 1/2 cup kosher salt. Use on pasta, roasted vegetables, lamb or fish.

3.      Asian Salt: Grind 1/2 tsp. coriander seeds in a spice grinder. Then mix with 1 tsp. toasted sesame seeds, 1/8 tsp. ginger and 1/2 cup kosher salt. Use on pork, soups, roasted chicken or vegetables.

4.      Spicy Salt: Mix 1 tsp. chipotle chili powder and 1/8 tsp. cayenne powder with 1/2 cup kosher salt. For more heat add more cayenne. Use on eggs, meats, potatoes or corn on the cob.

5.      French Provencal Salt: Coarsely crush 2 tsp. dried rosemary and 1 tsp. dried lavender in a spice grinder; mix with 1/2 cup kosher salt. Use on Tomatoes, avocado, cheese or salads.

Waffles, Maple Syrup and Lots of Love

                  What would you do if your kids were all grown up, your husband passes away and your house feels so empty that you don’t know quite what to do about it? Many times when life presents us with changes we go through a depression feeling emptiness where there used to be a sense of purpose and completeness.  Well, this is one lady that ended up filling her house and her heart full in a very special way.

                  Her name is Barbara and she lives in California.  One day she was reminiscing about how the family would get together every Saturday and enjoy a leisurely breakfast.  Her kids wanted only one thing and that was waffles.  So Barbara would mix up different batches of batter, varying the ingredients sometimes and then everybody would dig into the light, crisp results and the entire morning was spent just talking, sharing and enjoying each other’s company.  There was no hurry or rush.  This was family time.

                  Time went by after the kids left and then her husband died and she busied herself with lots of activities but something was still missing, especially on Saturdays. Then one day an idea popped into her head. ‘What if I invited some friends over for some waffles on a Saturday morning?’ So, she invited a small group from her church over and the word quickly got out that Barbara’s house was open for waffle breakfasts if one wanted to stop by. More and more people started coming by on Saturday mornings. This became her neighborhood tradition.  When she remarried, her new husband joined her in the festive actions of cooking and sharing with old and new friends.

                  When Barbara and her husband moved to a different area of town the tradition followed.  Apparently the largest group of people that have come to her home is 27 and the record number of waffles eaten is 7 (that was by her grandson). People clean up after themselves and many stay to have coffee and just visit. She enjoys each and every Saturday.  Sometimes people show up from other parts of the world and she just never knows what stories will be shared but the one thing she loves most is the love, warmth and caring that comes with ‘Barb’s Best Ever Waffles’ served to those who want to experience the most wonderful waffles anywhere.

                  Oh, I forgot to mention … Barbara is 94 years young and has worn out at least three waffles irons through the years. I think she has more fun than the Energizer Bunny and is an inspiration to all of us.                                   ~ Adapted from Guideposts

2)      A Cup of Cappuccino for the Entrepreneurs Soul by Cindy Thompson.  Entrepreneurs make this world go round in the financial arena because they are willing to take risks, daring to go where others fear to tread.  A collection of interviews this book is inspiring and timely in this economically challenging time.

3)      The 1000 Mile Stare by Gary Reiswig.  If you or someone you know is dealing with the issue of Alzheimer’s’ this is a must read book.  Gary’s story tells of his own family’s experience with this disease and how a gene contributes to it being passed along to other family members. It will touch your heart and educate you in a new level of understanding of Alzheimer’s.
