A Moment withDonna
…….Mind Glasses 

A big mug of steaming Earl Grey tea sits at the corner of my notebook as I am preparing this editorial. Its’ wispy tendrils float up into the air tickling and invigorating my sense of smell with a delicious aroma. Earl Grey is such a fragrant tea and there is nothing quite like that first hot, sweet cup in the crisp early morning hours of fall. Yes, fall has arrived in the Pacific Northwest.

Early hours of morning bring beautiful gifts of quiet and if you are attentive you can watch Nature come alive with activity. Squirrels chatter as they chase each other about tree trunks; crows talk loudly to each other during the early daylight hours, their morning conferences noisy with their crisp, harsh cries of communication; a red tailed hawk circles on invisible air currents in the sky high above the trees canopy looking for breakfast.

Another gift is Nature’s invisible brush. She paints the landscape with a vibrant, moving palate of colors. You have to pay attention as she is constantly changing the shades she chooses, her brush never rests. Streams of light illuminate a variety of forms allowing the imagination to fire up its ovens of creativity. Without my glasses the landscape blends like a Monet painting. When I put my glasses on clarity, crispness and form are well defined, localized and clear. Nature, like life, is every changing and this is a great time of year to put on your ‘mind glasses’ to gain new perspectives, clarity and perhaps new priorities.  Where would you like to be?  What would you like to do?  What changes would you like to implement?

In our busy world of today it is so easy to run around in circles and not get much done. Recently while in a pet store I watched two tiny mice, one white and the other a deep grey, running on a hamster’s wheel.  The little white mouse was constantly running and the tiny grey mouse was hanging on for dear life. I could just hear him saying, “I want to get off of this wheel…how can I make Whitey stop?” Whitey appeared to be having a fabulous time but the little grey mouse was totally frozen in place, going round and round to nowhere. These two tiny characters seemed to be a good representation of what we so often do to ourselves; accepting what we don’t want and not getting off of the wheel of confusion to really find out what is most important to us. At some point we have to say ‘enough!’ and give ourselves some quiet time to gain clarity. As much as we would like to think that someone else can do it for us that is not the case. No, we have to make the time to really get in touch with ourselves.

                  How can we do that?  By turning off the television, cell phone, computer and whatever beckons us with its noisy call and become quiet.  Meditation is a wonderful tool that can empower one to calm down, chill out and come into harmony with the bigger purpose and presence of life. Your inner ‘mind glasses’ will gain the insights and wonder of what is within and without yourself. You are a significant part of this experience we call life but you may never truly understand your essence without taking the time for quiet and stress free moments that meditation can bring you.

                  The season is changing as it always does.  Fall to me brings an awareness that it is important to be prepared as nothing stops the clock of time moving forward, however, it is always wise to stop and savor the process of change while determining what needs to be done to keep a flow going in a harmonious way. Give the gift of quiet to yourself and become aware of your mindful moments of beauty, joy, harmony and love.  They truly are the gifts of the heart and spirit that are forever timeless and precious in experience.

The Recipe Box – Coconut Cream Cake with Lemon-Lime Filling

Recently I was asked to prepare dessert for a group dinner.  I took this cake, one of my favorites, and it was a fabulous success.  You do need to prepare this delicious cake at least a day prior to when you will be serving it. I guarantee that you will enjoy raves from those you serve it to every time you prepare it.

                  Ingredients:

Cake – 2 1/2 cups sifted (sift before measuring) all-purpose flour, 2 1/2 tsp baking powder, 1⁄2 tsp salt, 1 cup butter (room temp.), 2 cups granulated sugar, 4 eggs, 1 cup milk, 1 tsp vanilla extract. Filling – 1 cup granulated sugar, 3 Tbls cornstarch, 1/2 tsp salt, 1/2 cup orange juice, 2 Tbls lemon juice, 2 Tbls lime juice, 1/4 cup water, 3 egg yolks, 1 Tbls grated lemon peel, 1 Tbls grated lime peel, green food color (optional). Frosting – 2 cups heavy cream,1/2 cup sifted confectioners’ sugar, 1 can (4oz.) flaked coconut, 3 thin slices lime, halved.

                  Directions:

Preheat oven to 350 degrees. Grease and flour three (9x11/2”) round pans. Sift flour with baking powder and ½ tsp salt. In large bowl of mixer, at high speed, beat butter and 2 cups sugar until light. Add 4 eggs, one at a time; beat after each addition.

  • Continue beating, occasionally scraping bowl with rubber scraper, until fluffy-2 minutes. At low speed, beat in flour mixture (in fourths) alternately with milk (in thirds) beginning and ending with flour. Add vanilla. Beat just until smooth-about 1 minute.
  • Pour into prepared pans; bake 25 to 30 minutes, or until surface springs back when gently pressed with finger. Cool in pans on wire racks 10 minutes. Remove from pans; cool on racks.
  • Filling…In small saucepan, mix 1 cup sugar with cornstarch and salt. Gradually stir in orange, lemon and lime juices and the water. Bring to boiling over medium heat, stirring. Remove from heat. Add egg yolks, one at a time, beating well after each addition. Bring to boiling, stirring; boil 1 minute. Remove the pan from heat.
  • Stir in lemon and lime peels and a few drops color. Turn into bowl; cool over ice water. Make frosting: In medium bowl, combine cream and confectioners’ sugar. Refrigerate 1⁄2 hour. Beat until stiff. Measure 1 cup whipped cream, and, with whisk, fold into filling.
  • Place one cake lay, top side down, on large cake plate. Spread with half of filling almost to outer edge. Repeat with second layer and rest of filling; place top layer right side up. Frost with rest of whipped cream, decorate with coconut and lime. Refrigerate.

                  Donna note:  I use wooden skewers to secure the 3 cake layers in place after the filling is spread between layers. Then I cover the cake with the whipped cream mixture.  If you like a thicker whipped cream frosting covering the cake double the ingredients as listed. Before serving remove the wooden skewers.

True Stories about Real People

Attitude is everything.  When I came across this story I just had to pass it on.  Enjoy!

                  Robert De Vincenzo was not just a great golfer but a very special human being that impressed others in a very special way. This is just one of the stories about him.

                  De Vincenzo had won a tournament and just after he had received a winning check he was on his way back to the clubhouse.  A young dark-eyed, very sad woman approached him saying, “It’s a good day for you, but I have a baby with an incurable disease. It’s of the blood and the doctors say she will die.”  De Vincenzo looked at her thoughtfully and then asked, “May I help your little girl?” The woman nodded. He then took a pen out of his pocket, endorsed his winning check and then pressed it into the young woman’s hand saying, “Make some good days for the baby.”

                  A few days later De Vincenzo was approached by a PGA official who said to him, “Some of the boys in the parking lot told me you met a young woman after you won the tournament and you gave her your winnings. Well, she is a phony.  She has no sick baby. She fleeced you, my friend.”

                  De Vincenzo looked at the official and asked, “You mean that there is no baby who is dying without hope?” The official nodded. The famous golfer then said with a big smile, ”That’s the best news I’ve heard all week!”

1.      ‘If I Die Before I Wake’, Barb Rogers.  This is a powerfully written book about Barb’s personal battle with alcohol and how she won it. No secrets here just a true story about a real journey of pain, growth and understanding.

2.      ‘Science Was Wrong’, Stanton Friedman.  The journey to discovery is too often compromised by the filters of ignorance that are too often worn by supposed experts. Why does it take so long for the science community to accept new paradigms?  Find out this and more in this book.

3.      ‘The C.H.I.L.D. Game Plan, Bruce Taylor. A coach with a passion to empower kids to reach for their greatest potential and how to do it is awesome in content.  Great for parents, grandparents and teachers and anyone else who likes to work with kids.

What’s Your Story?
