......New Connections

     

We have been enjoying a very late summer these past few weeks and what a joy it is to actually see sunshine!  Those of us living in the Pacific Northwest thought Old Man Sunshine was going to pass us by totally. Thank heavens he decided to visit for a while. We are enjoying his golden glow. However, our old oak that resides in our back yard is delivering a different message. This old oak usually is the last one to make color shifts to fall tones of gold and brown. This year not only have the leaves turned early but they are in the process of falling off so I think we are in for a cold, wet winter and the old tree is giving us fair warning  of upcoming weather changes.

One of the joys of the last days of summer before the kids go back to school is attending outdoor activities. We had the wonderful opportunity to be invited to our first Ukranian Independence Day Festival this past weekend in Renton, Washington and what a fabulous event it was. There was lots of dancing by young people whose athletic moves were amazing, movies about Ukranian history, their fight for independence, musicians playing their dynamic music and so much more. The Ukranian people are very friendly and love to share stories, good food, and family values are strong. The dynamic, intricate and colorful embroidery that covers their native costumes is gorgeous and brought back memories of when my husband and I visited Kiev in 1992.  During our visit we purchased a white linen runner for the table and matching napkins that were magnificently embroidered in red and black complex patterns and they are enjoyed every holiday season.

While at the event I was given a Ukranian magazine. Inside was an article about the history of these resilient people who were and are determined to express their desire for freedom. “Unfortunately, her majesty Freedom came to Ukraine two hundred three years later than to the U.S. That is why, weary and downtrodden Ukrainian immigrants, often hungry and living in despair, sought freedom and a better life in America.” This is a statement I read with thoughtful awareness. For it applies, not just to the Ukranians, but to people from around the world whose desire for freedom of opportunity is just as strong.

Another quote in the article was by George Washington, “Let us therefore animate and encourage each other, and show the world that a free man, contending for his liberty on his own ground, is superior to any slavish mercenary on earth.” He said this on July 2, 1776.

We have a lot of challenges that are facing us here in the United States but that is nothing new in our history. Our forefathers had to battle and sacrifice to be free from tyranny and the battle continues to go on today.  There are always those who are happy to relieve us of our freedoms so they can dictate and dominate. So like the Ukranians we must be ever vigilant and pay attention to what people actually do…not what they say.

Making new connections with people from other cultural backgrounds is always good. Often when you listen to their stories you’ll realize how fortunate you are and when you start to count your blessings …well, being grateful is always a good thing.  Be open to opportunities to make new connections with people, cultures, music and art.  It will enrich you beyond your imagining.

Summer is over. School bells are ringing welcoming students of all ages back into the classroom. Fall is busily and briskly shifting her colors, scattering ever changing patterns of red, gold and brown leaves all over the place. She lets us know that nothing stays in place forever and planning for the coming change of season is a good idea.

The Recipe Box..
Homemade Blackberry Syrup

Blackberries bushes are growing profusely this year and with our cooler summer they didn’t start getting plump berries until just recently. So a couple of days ago I picked about a quarts worth and as I was walking home with my loaded container I wondered what I should do with them.  I was too busy to cook something special so I decided to make blackberry syrup for winter.  I dug out one of my old cookbooks and found a very simple recipe which turned out fabulously. The fresh berries created a flavor that was out of this world good.  Here it is and this recipe can be used for any berries, cherries or your favorite fruit. A fruit syrup makes great gifts for the holidays too.

Thin….for apples, grapes, rhubarb                      2 cups sugar, 4 cups water….Yield 5 cups of syrup

Medium….for apricots, berries, cherries, figs, grapefruit, grapes, peaches, pears, plums, prunes

3 cups sugar, 4 cups water….Yield 5 1/2 cups of syrup

Heavy….for berries, figs, peaches, plums           4 cups sugar, 4 cups water….Yield 6 ½ cups of syrup

 To make syrup: Add sugar to water, cover, and bring to a boil. Remove cover, lower heat, and simmer for 3 minutes. ( I added my fruit right at the beginning of the process and actually cooked it until the syrup was dark in color from the juices of the blackberries. I also doubled the recipe.  The amount of fruit you add is up to you. A couple of pints of fruit is what I used and I choose not to strain out the berry fruit particles.) I ended up with 8 pints of blackberry syrup in mason jars that can be given as gifts or enjoyed by us for those special Sunday breakfasts that I love to fix.
